easter biscuits

ingredients

2.5  cups    soft wheat self-rising flour
1    tsp     baking powder
1/4  tsp     salt
1/4  tsp     black pepper
1    tsp     sugar
1/4  cup     butter (half a stick)
1/2  cup     whole milk
1/2  cup     sour cream, buttermilk, or greek yogurt

instructions

  • mix dry ingredients in a bowl
  • kneed in softened butter, you’re making biscuits!
  • mix milk and sour in separate cup, save a little
  • stir with wooden paddle
  • drop 8-12 biscuits on parchment-lined pan, wash with leftover milk
  • bake for 12-15 minutes, turn halfway

notes

great as [[sausage-biscuits]], [[biscuits-&-gravy]], or just served as a side with something like joshuas-favorite-chicken or veggie-stew. you can also add 3/4 cup of chopped kielbasa with 3/4 cup of gouda for sausage & gouda biscuits.

pork stock

ingredients

1    pack    pork ribs (the cut up kind)
2            whole onions
3-5          cloves of garlic
2-5          whole tomatoes
salt and pepper to taste
water

instructions

  • season the pork ribs generously with salt and pepper
  • sear the ribs on a hot hot skillet
    • do not fully cook, you’re just tryna develop some flavors
  • place ribs in crock pot and fill water to one inch below top of meat
  • cook overnight on low
  • in the morning remove meat
  • in a stock pot caramelize one onion and sauté garlic until fragrant
  • pour in liquid and add the other onion and tomatoes cut into quarters
  • bring to a simmer and let sit until vegetables dissolve
  • run through a fine mesh sieve into jars

notes

this recipe is great when used to make [[veggie-stew]], [[ramen]], or savory-brunch-oats.

pulled pork

ingredients

1    pack    pork ribs (the cut up kind)
alt/ a boston butt
salt and pepper to taste
water

instructions

  • season the pork ribs generously with salt and pepper
  • sear the ribs on a hot hot skillet
    • do not fully cook, you’re just tryna develop some flavors
  • place ribs in crock pot and fill water to one inch below top of meat
  • cook overnight on low
  • in the morning remove from liquid and pull it apart
  • serve on your favorite bun or regular white bread with a real-good-bbq-sauce!

real good bbq sauce

ingredients

3    cups    sugar
some heinz (ketchup, 57, or HP)                    50%
mustard (yellow or brown)                          15%
vinegar (white wine, apple cidar, or homemade)     15%
a sweet (more ketchup, apple butter, sugar, etc.)  15%
hot sauce (truff or chiquita is my fav)             5%

instructions

  • mix contents together thoroughly
  • season with black pepper, garlic, onion, paprika, butt rubb, whatever you like
