caramelized milk

ingredients

3.5 cups    whole milk
1/2 cup     heavy cream
230 g       sugar

instructions

  • mix together in a dutch oven
  • cook over med-low heat until reduces to 400g

notes

This is used to make pumpkin-pie but can be used any other time caramelzied milk is needed.

cheem cream

ingredients

226g    softened cream cheese
2 tbs   softened butter
100g    powdered sugar
1 tsp   vanilla
1 tsp   black pepper

instructions

  • mix ingredients together thoroughly

duck chocolate cake

ingredients

1.75 cups     all purpose flour
0.75 cup      cocoa powder
1.5  tsp      baking powder
1.5  tsp      baking soda
2    cup      white sugar
1    tsp      salt
2             eggs
1    cup      milk
0.5  cup      vegetable oil
2    tsp      vanilla extract
1    cup      boiling water

instructions

  • mix dry ingredients
  • add eggs, milk, oil, and vanilla
  • add boiling water, whisking to incorporate
  • pour batter into cake pans
  • bake for 35 minutes

Kate made this for me for my 29th birthday. She dressed it with whipped cream and a chocolate whipped cream duck. A super light and airy cake.

easter biscuits

ingredients

2.5  cups    soft wheat self-rising flour
1    tsp     baking powder
1/4  tsp     salt
1/4  tsp     black pepper
1    tsp     sugar
1/4  cup     butter (half a stick)
1/2  cup     whole milk
1/2  cup     sour cream, buttermilk, or greek yogurt

instructions

  • mix dry ingredients in a bowl
  • kneed in softened butter, you’re making biscuits!
  • mix milk and sour in separate cup, save a little
  • stir with wooden paddle
  • drop 8-12 biscuits on parchment-lined pan, wash with leftover milk
  • bake for 12-15 minutes, turn halfway

notes

great as [[sausage-biscuits]], [[biscuits-&-gravy]], or just served as a side with something like joshuas-favorite-chicken or veggie-stew. you can also add 3/4 cup of chopped kielbasa with 3/4 cup of gouda for sausage & gouda biscuits.
