pumpkin pie

ingredients

425 g    roasted pumkin puree
400 g    caramelized milk
2        eggs
1        egg yolk
3 g      ground cinnamon
2 g      ground ginger
1 g      ground clove
6 g      vanilla
2 g      sea salt
1 g      fresh ground nutmeg

instructions

  • mix together puree, [[caramelized-milk]], eggs, and spices
  • pour into pie-crust

real good bbq sauce

ingredients

3    cups    sugar
some heinz (ketchup, 57, or HP)                    50%
mustard (yellow or brown)                          15%
vinegar (white wine, apple cidar, or homemade)     15%
a sweet (more ketchup, apple butter, sugar, etc.)  15%
hot sauce (truff or chiquita is my fav)             5%

instructions

  • mix contents together thoroughly
  • season with black pepper, garlic, onion, paprika, butt rubb, whatever you like

savory brunch oats

ingredients

1/4  cup     rolled oats
1/4  cup     boiled water
1    tsp     miso paste
1/2  tsp     unicorn salt
1/4  cup     milk or alternative
1            fried egg

instructions

  • cook oats in water until tender, mix in miso paste.
  • add milk and cook until thickened, season with unicorn salt, or other seasonings
  • serve with fried egg on top
  • to make it crazy good, substitute water for chicken stock and add in some chicken- great for leftovers!

sequoia cakes

ingredients

2    cups   old fashioned oats
2    cups   milk
3           eggs (separated)
1-3  tbs    sugar (egg whites)
1/2  cup    all purpose flour
1/4  cup    maple syrup or sugar
opt extras  cinnamon, nutmeg, berries, etc.

instructions

  • combine oats with milk, yolks, flour, sugar, and extras
  • set aside
  • whisk egg whites with sugar until forming mild peaks
  • slowly fold in oat mixture into egg whites
  • cook on a large oiled skillet or pan around 325 or medium heat
  • these take a bit longer to cook in the middle, but the outside is unlikely to become ‘overdone’

notes

named after how they look like a cross cut of a giant sequoia tree, bridget and i came up with these while on a trip in california. we had a bunch of food we had bought for day-hikes and didn’t wanna waste anything. the sequoia cake was born.

spring roll cashew sauce

ingredients

2 tsp    smoked paprika
1 tsp    ginger powder
1 tsp    chopped onion
3 medium cloves garlic, chopped
1/2 cup  cashew butter
1/8 cup  rice vinegar
1/8 cup  honey
1/8 cup  orange juice
1/8 cup  less-sodium soy sauce
1 tsp    salt, to taste
1 tsp    black pepper
1 tsp    red pepper flakes

instructions

  • in a food processor, blend ginger, garlic, and onion until chopped finely
  • add other ingredients and blend until smooth
