ingredients
1 pack pork ribs (the cut up kind)
2 whole onions
3-5 cloves of garlic
2-5 whole tomatoes
salt and pepper to taste
water
instructions
- season the pork ribs generously with salt and pepper
- sear the ribs on a hot hot skillet
- do not fully cook, you’re just tryna develop some flavors
- place ribs in crock pot and fill water to one inch below top of meat
- cook overnight on low
- in the morning remove meat
- in a stock pot caramelize one onion and sauté garlic until fragrant
- pour in liquid and add the other onion and tomatoes cut into quarters
- bring to a simmer and let sit until vegetables dissolve
- run through a fine mesh sieve into jars
